Chamber Celebrates 20 Year Anniversary of Acapulco Mexican Restaurant

The Greater Stillwater Chamber of Commerce celebrated a 20 year anniversary milestone of Acapulco Mexican Restaurant at their Stillwater location.

The family-owned and operated, Acapulco Mexican Restaurant is not a chain. Jesus and Maria Leon, were born in Jalisco, Mexico and relocated their family to Minnesota in the early 90's. They had nine children, all of whom are involved with the business.

From architecture and construction, to equipment repair and maintenance, to electrical engineering, cooking, catering, menu planning, bartending and the day to day running of the restaurants, the family is truly running the business.

Acapulco employs over 550 people, and the Leon family has been consistently generous over these many years in their communities.

Acapulco Mexican Restaurant was established in 1996 with the opening of their first location in Coon Rapids. Since then, eight more restaurants have been opened around the Twin Cities Metro. Current restaurants are located in Stillwater, Blaine, Ham Lake, Maplewood, New Brighton, Ramsey, and Woodbury, and a ninth location in Andover is scheduled to open this July.
